Roasted Beet Salad with Feta and Walnuts

A healthy roasted beet salad with feta and roasted walnuts, drizzled with a homemade vinaigrette. The beets are the star of the show!

This salad has the perfect balance of sweet and salty from the beetroot and feta cheese so good! Super healthy and tastes even better! It’s a dish that’s both healthy and delicious, and I’ll happily eat beets in this form.

Roasted Beet Salad with Feta and Walnuts

Ingredients

  • 4 medium sized beets, scrubbed clean and tops removed

  • 1/2 cup roasted and coarsely chopped walnuts

  • 4 ounces  feta cheese

  • 3 cups lettuce leaves or baby spinach

  • For  Vinaigrette

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • 2 garlic cloves – minced

  • ½ teaspoon black pepper

  • ½ teaspoon salt (or to taste)

  • 3 tablespoons balsamic vinegar

Directions

  • Preheat the oven to 400 degrees F (200 degrees C). Wrap each beet individually in aluminum foil, and place onto a baking sheet.
  • Bake beets in a preheated oven until easily pierced with a fork, 45 minutes. Once done, remove from the oven, and allow to cool until you can handle them. Peel beets, and cut into 1/4 inch cube.
  • The skin will easily peel off. After removing the skin of the beetroots, chop the beetroot into cubes
  • For  Vinaigrette
  • Mix all ingredients together in a bowl and whisk slightly. Set Aside.
  • Pace the lettuces or spinach(I am using spinach) in a large bowl and pour half of the salad dressing over them. Mix well.
  • Place beets in a large bowl and pour the remaining salad dressing over them. 
  • Put the lettuce in a serving bowl and arrange the beets over it. Crumble feta cheese in between the spaces and top with the toasted walnuts.
  • Enjoy!!

Notes

  • You can add pumpkin seeds and dried cranberries for some sweetness and extra crunch.
  • Feel free to add other ingredients like crumbled goat cheese, red onion, or avocado for additional texture and flavor.
  • Want a vegan option? Replace the feta cheese with crumbled tofu or tempeh.
  • Turn this salad into a main course by adding cooked quinoa or lentils.
  • Get creative with the dressing! Experiment with different vinegars, oils, and herbs to find your perfect flavor combination.
