Mint And Melon Salad

There’s nothing more refreshing than perfectly ripe, in-season melon. And that fresh flavor gets elevated further when paired with lemon, honey and herbs picked straight from the garden. This melon ball salad is fresh, delicious, and fun to make!

I decided to use a mix of melons (watermelon, cantaloupe and honeydew) because I thought the different colors would make it even prettier. And I wasn’t wrong. After I tossed it and put it in the bowl it was a Simple, stunning and yummy salad.

Ingredients

  • 1/2 a large cantaloupe

  • 1/2 a large honeydew melon

  • 1/2 a large “personal size” seedless watermelon

  • 1 tablespoon honey

  • 1 tablespoon lemon juice

  • ¼ cup chopped fresh mint

Directions

  • Use a melon baller to scoop round spheres out of each melon and place them into a large bowl.
  • In a small bowl, combine honey with the juice of lemon. Whisk to combine and pour over the melon. Gently toss together before serving with chopped fresh mint leaves.
  • If making in advance; chill melon then toss with honey lemon syrup and garnish with fresh mint right before serving.
